An omelette or omelet is a dish made from beaten eggs quickly cooked with butter or oil in a frying pan, sometimes folded around a filling such as cheese, vegetables, meat (often ham), or some combination of the above. To obtain a fluffy texture, whole eggs or sometimes only egg whites are beaten with a small amount of milk or cream, or even water, the idea being to have “bubbles” of water vapour trapped within the rapidly cooked egg. Some home cooks add baking powder to produce a fluffier omelette; however, this ingredient is sometimes viewed unfavourably by traditionalists.

According to the founding legend of the annual giant Easter omelette of Bessières, Haute-Garonne, when Napoleon Bonaparte and his army were traveling through southern France, they decided to rest for the night near the town of Bessières. Napoleon feasted on an omelette prepared by a local innkeeper that was such a culinary delight that he ordered the townspeople to gather all the eggs in the village and to prepare a huge omelette for his army the next day. – Wikipedia

 

 

Vinod Khanna, is an Indian Cavalry Officer, who after 34 years of active service joined the corporate sector and worked for another 14 years, mainly in the infrastructure sector. He is now settled in Gurgaon and is enjoying a fully retired life playing golf and is a member of the managing committee of an organisation looking after the welfare of cavalry officers.

As a part of the army training, he being a young cavalry officer and a member of the tank crew, he had to be self-contained for up to 72 hrs. One had to acquire some basic cooking skills and being out in the open, like a camping adventure, I made my first ‘Chapatti’ omelette. It was gradually refined over the years, till one day I surprised my new bride, an expert in gourmet cooking, with the Fluffy Masala Cheese Omelette.

 

 

The Fluffy Masala Cheese Omelette, the ideal egg preparation for a cool wintry morning breakfast, makes the taste buds drool once again – An egg preparation for all seasons, reasons and ages.

Fluffy Masala Cheese Omelette

Indian Spicy Omelette

Ingredients~

2 eggs
½ a medium tomato
Few leaves of green coriander
1/8th of a medium size onion
2 green chilies
25 gms grated cheddar cheese
Pinch of salt (to taste)
2 tablespoons of cooking oil

Preparation~

1. Separate the egg yolk from the white of the eggs.
2. Cut the tomato, onion, coriander and green chilies in to small pieces and keep in separate containers (glass bowls)
3. Grate the cheddar cheese and keep it separately in another bowl.

Method ~

1. Beat the egg whites with a fork/whisk in a bowl till the egg white is nice and firm.
2. Place the frying pan on a medium flame and pour in the cooking oil.
3. Beat the egg yolks and mix with the egg white gently with a fork.
4. Once the oil in the frying pan is warm pour the egg mix in the frying pan, ensuring it has evenly spread all over.
5. Now sprinkle the cut onions, green chilies and coriander and pinch of salt on the egg spread in the frying pan.
6. Add the grated cheese and/or mushrooms, ham.
7. Let the bottom of the egg spread firm up and become light brown and fold the egg over and toss it once or twice, till the oblong omelette is fluffy, nice and brown – do not tap the folded omelette with the spatula, it will become flat.

Serve ~

The nice and warm fluffy omelette is now ready to be served with well-done crisp buttered toasts with the following add-ons, all or any.

~ Rashers of crisp bacon or sausages
~ French fries
~ Halves of fried tomatoes
~ Baked beans
~ Hot and sweet tomato sauce and some mustard too
